perfect pumpkin cookie

If you followed this blog back in 2010, you’ll remember how crazy I went with pumpkins! I cooked up a bunch and used it to make all sorts of cookies, muffins, bread and more.

 

When a I followed posted , I immediately saved the recipe and ta-da, have now shared it with you. I remember actually making them in my Grandma’s house in Idaho. Let me tell you, it’s harder to cook in someone else’s kitchen than I had originally thought! But it was enjoyable.

high-altitude ginger molasses cookies

As I mentioned before, I tire of trying to adjust my own recipes to produce good results at high elevation, so I went on a hunt for a proven ginger cookie recipe. I’ll always save my mother’s for when I’m baking at sea level, but this I found is a phenomenal substitute.

How to describe how it tastes…?

In one word – CHRISTMAS. It tastes like Christmas, folks.

I didn’t adapt a single part of Mountain Mama’s . It’s that awesome.

Also, as she says and as I’ve tested out more than once, these freeze really well!

I don’t know what possessed me to try to be creative, but I think it turned out all right!  I signed up to be a vendor at a local Christmas Bazaar here and created these jars:

It was fun to shop for the pieces with my mom and also to have a mom that owned a glue gun.  Heh.

looking back: mini cinnamon rolls

As I mentioned in my , I decided to clean up the site and start it fresh. These “looking back” posts will be fairly frequent as I catch up my collection of recipes on here…

Unfortunately, unless I make the dough from scratch, this particular recipe is impossible to create in Quito. At least, I am unaware of any store selling tubes of crescent roll dough… However, I am so used to having to make dough (pies, pizzas, etc.) from scratch that maybe I’ll just need to make these again soon!

These little babies were a cinch to make.  My brother dropped by after I had made them, ate one and was moderately pleased.  When I returned from an errand a little bit later, there were only a few left.  Hmmm…  Apparently they were better than he let on!

I’ve never actually made normal-sized cinnamon rolls from scratch so I can’t fully compare, but I sure prefer eating the mini ones better!  I love bite-sized foods.  :)

The maple-flavored icing was the kicker.  The perfect touch.  And I’m not usually a huge maple fan!

The idea came from and the recipe from . Seriously just make this next time you need a quick breakfast/brunch crowd pleaser.  The 8 minutes is completely worth it.
